level 2 award in Food Safety (1 day)

The Level 2 award in Food Safety in Catering replaces the basic food hygiene and foundation course in food hygiene.

Qualification lasts 3 years.

This course is regarded as a minimum entry level for all food handlers preparing raw meats and fish, and is geared to client specific needs, as well as the broader aspects of food handling, understanding contamination, and how it can be avoided

 

Outline of programme

The qualifications cover the following topics:

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot holding and reheating
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

 

Qualification information

Designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

Course duration: One day programme

Assessment method: Multiple choice examination

Food Hygiene workbook available

Certificate issued within around 6 weeks of course completion
